The AOC Chablis covers about 5,800 ha of area in the vineyard communes of Chablis in Burgundy. Chablis is a small village of 2,500 inhabitants located in the Yonne department. According to historical sources, the monks planted the first vines in this village in 1113. Today, these terroirs produce the first and great vintages of this world-famous appellation. The wine terroir of the Bourgogne Chablis appellation
The decree of 13 January 1938 determined the production areas of the appellation Chablis. This appellation is divided into Petit chablis, Chablis village and Chablis Premiers crus, Chablis Grands crus all from the Chardonnay grape variety. The Chablis Grands Crus are exposed to the northeast on the upper part of the Serein Valley, at an altitude varying between 100 and 250 m. The plots of Grands Crus are divided into 7 climates including Blanchots, les Clos, Bougros, les Preuses, Grenouilles, Vaudésir and Valmur. The Premier Cru appellation, meanwhile, is divided into 40 climates. The word climate refers to the well-defined plot of vines that has its own history and its own climatic and geological characteristics.
The terroir of this appellation refers to the Kimmeridgian soil. This geological origin alternating marl and marl limestone dates back about 150 million years. It is responsible for white wines with exceptional qualities: fragrant with aromas of white flowers and lemon, limpid, bouqueted, dry with notes of fat and minerality. The climate is semi-continental, that is, with long and harsh winters and scorching and sunny summers. Chardonnay is the only grape variety allowed in this appellation.

-François Raveneau: this estate extending over an area of 9.5 ha is the most prestigious of the estates of this appellation. We owe its creation in 1948 to François Raveneau. His sons have now taken over to carry the family torch. The wines of this estate are racy, exceptional because its production is almost entirely made up of Grands Crus (Blanchot, Les Clos and Valmur) and Premiers Crus (Montée de Tonnerre, Les Vaillons, Butteaux, Chapelot, Mont-Mains and Forêt). It is available in limited quantities. These wines, which are among the most sought-after and prized in the world, each have their own characters, but the quality is always at the rendezvous. They usually have a fabulous structure with floral, mineral notes and a hint of smoke on the nose and a tense mouth, intense when they are young. With age, they reveal a new dimension and gain in richness, concentration and depth.
-Laurent Tribut: this reference producer of Chablis is the son-in-law of René Dauvissat. He has been producing his wines in the latter's cellars for years, but he has recently come into possession of his own cellars in Poinchy. Its estate extends over 7 ha. The latter includes three Premiers crus including Beauroy, Côte de Lechet and Montmains. The winemaking procedure is traditional. Laurent Tribut also prefers not to make interventions in the cellar and let nature do it. Its wines have a purity and a beautiful expression of its terroir. They express the roundness of Chardonnay combined with the mineral layers of the Chablis terroirs. At the tasting, its inimitable wines with a clear and luminous color have a beautiful minerality and depth while ensuring a perfect balance between acidity and fat. On the nose, they reveal complex and attractive aromas of white flowers, almonds and citrus fruits. These white wines can be kept between 3 to 7 years. Its subtlety and the complexity of its aromas predestine it to high-class dishes such as lobsters, turbot fillets, lobsters etc.
-Vincent Dauvissat: this family property is surely the most emblematic estate in this appellation. Robert Dauvissat founded it in 1920 and passed it on from father to son for 3 generations. The 12 ha inheritance is currently managed by Vincent Dauvissat. The vineyard is divided between two Grands Crus, three Premiers Crus. Yields are limited and winemaking procedures are meticulous. These are vines cultivated according to the methods of biodynamics. They also provide little intervention in the winemaking process in order to allow the wines to retain the expression of their terroir and benefit from a good aging capacity. The wines of this estate are recognized by their beautiful minerality, the length and purity of their finish. Production in very small quantities and the increase in demand have an impact on the price of wines. Amateurs thus snatch old vintages at a golden price.
